Ingredients
400 g tin of chopped tomatoes
1 cucumber, deseeded and chopped
1 red chilli, deseeded and finely chopped
1 lemongrass stalk
1 handful of fresh parsley, chopped
1 tbsp fish sauce
0 Juice of 1 lemon
0 Celery sticks
Method

1 Combine all the ingredients in a blender and purée until combined but still chunky. Chill before serving in cups with sticks of celery.
