2 red onions, peeled and cut into wedges
4 garlic cloves, peeled
4 chicken thighs
4 chicken drumsticks
4 medium potatoes, unpeeled and cut into wedges
2 rosemary sprigs
Salt and black pepper
2 tbsp olive oil
1 Heat the oven to 220°C/200°C fan/gas mark 7. Slice one-third of the chorizo sausage.
2 Put the onion, garlic, chorizo, chicken pieces, potato and rosemary in the bottom of a large roasting tin.
3 Season with salt and black pepper, drizzle with olive oil and toss all the ingredients. It might be best to use your hands, but make sure and wash afterwards.
4 Place in the oven to bake for 45 minutes.
5 Halfway through the cooking time, give everything a good basting in the chorizo juices. Serve as soon as the chicken is cooked through.
