Smoked salmon toasts with avocado

Serves 2

2 slices brown bread, toasted

2 tbsp soft cream cheese or Ricotta

1 avocado, pitted and sliced

40g smoked salmon

Squeeze of lemon juice

Black pepper

 

  • Spread the brown toast evenly with cream cheese or Ricotta.
  • Add the avocado slices and squeeze over some lemon juice.
  • Top with smoked salmon and season with black pepper.

MAKE IT YOURS:
To make these even quicker to prepare, use wholegrain crispbreads instead of toasting brown bread. Add some thinly-sliced tomato and/or red onion to increase your intake of fruit and veg.
