Ingredients
25 g unsalted butter
1 large onion, chopped
850 g sausage meat
2 garlic cloves, crushed
10 g sage leaves, chopped
2 fresh thyme sprigs, chopped
2 egg yolks
100 g fresh breadcrumbs
0 Salt and black pepper
Method

1 Heat the butter in a pan and cook the onions gently until soft and transparent. Leave to cool, then mix with all the other ingredients and shape the mixture into a sausage.

2 Roll this in parchment paper, followed by foil, then bake alongside the turkey for 40 minutes.

3 Take the foil off and allow to brown for a further 15 minutes. When cooked, slice into rounds and serve.
