1 bunch of asparagus, trimmed
2 lemons, 1 thinly sliced and 1 juiced
40 g butter, melted
2 tbsp fresh dill, chopped, plus extra to garnish
1 garlic clove, crushed
0 Salt and black pepper
1 Preheat the oven to 180˚C/160˚C fan/gas mark 4. Add the salmon fillets and asparagus to a baking tray. Arrange the lemon slices over the salmon fillets.
2 Stir together the remaining ingredients, then pour over the salmon.
3 Bake for 15 minutes until the salmon flakes easily with a fork and the asparagus is tender. Serve warm with dill and a side of couscous.
