Ingredients
4 smoked bacon rashers, cut in half
450 g skinless salmon
0 Salt and black pepper
1 tbsp olive oil
120 g mayonnaise
1 tbsp sun-dried tomato paste
1 tomato, sliced
0 Lettuce, to top
4 wholemeal rolls, toasted
Method

1 Heat a pan over a medium heat and add the rashers. Cook for 5-6 minutes until crispy. Drain on a plate lined with kitchen paper.

2 Preheat the grill to a medium-high heat. Cut the salmon into slices that will fit onto the rolls, season with salt and pepper and drizzle over the oil. Transfer to a baking tray and grill for five minutes per side.

3 Mix together the mayonnaise and sun-dried tomato paste until smooth. Spread a spoonful on one side of the toasted bun, top with a square of salmon, two pieces of bacon, some tomato and lettuce. Serve warm.
