Ingredients
45 g butter
1 onion, chopped
30 g flour
720 ml chicken stock
400 ml milk
2 potatoes, peeled and cubed
1 tsp fresh thyme leaves, chopped
Salt and black pepper
450 g salmon fillets, cubed
1 x 340g tin of sweet corn
Method
  1. Heat the butter in a frying pan over a medium heat and cook the onion for five minutes until soft.
  2. Whisk in the flour until smooth. Stir in the chicken stock and milk until combined.
  3. Add the potatoes and thyme and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 10 minutes until the potatoes are tender.
  4. Add the salmon and sweet corn and simmer for five minutes until the salmon is cooked through and the corn is warm.
