Ingredients
260 g couscous
4 small squash, tops sliced off and centres scooped out
2 tbsp olive oil
60 g pistachios
0 few sage leaves, chopped
2 tsp chilli pepper
4 tbsp dried cherries or cranberries
Method
  1. Soak the couscous in 240ml of water. Heat the oven to 200°C/180°C fan/gas mark 6 and rub the squash in oil. Roast the squash for 30-40 minutes or until tender.
  2. Combine the remaining ingredients and use it to stuff the squash. Bake for a further 10 minutes.
