1 onion, chopped
50 g breadcrumbs
1 tbsp parsley leaves, chopped
150 g prawns, peeled and chopped
0 Juice of 1/2 a lemon
0 Salt and black pepper
4 cod fillets
1 tbsp vegetable oil
1 Melt the butter in a frying pan and cook the onion for 5-6 minutes until soft. Remove from the heat, then stir in the breadcrumbs and parsley.
2 Add the prawns and lemon juice and season with salt and black pepper.
3 Make a slit through the middle of each cod fillet to make a pocket (be careful to not slice all the way through). Fill the pocket with the stuffing mixture.
4 Heat a grill pan to a medium-high heat and brush the fish with the oil. Season with salt and pepper and cook for 10 minutes, flipping once. Serve warm.
