1 tbsp vegetable oil
1 large garlic clove, crushed
2 cm piece of ginger, peeled and grated
280 g prawns, peeled, de-veined and chopped
2 spring onions, chopped
1 tbsp soy sauce
1 Cook the Uncle Ben’s Express Egg Fried Rice according to the package instructions and set aside.
2 Heat the oil in a frying pan or wok over a medium-high heat. Add the garlic and ginger and cook for 30 seconds until aromatic.
3 Add the prawns and cook for 2-3 minutes, stirring to cook through. Add the spring onions and stir until wilted.
4 Stir in the soy sauce, then add the cooked rice and stir to combine. Serve warm.
