Ingredients
800 g leftover mashed potatoes
Juice of 1 lemon
6 spring onions, sliced
Salt and black pepper
1 tbsp olive oil
100 g cream cheese
1 tbsp horseradish
250 g Hederman’s Smoked Salmon, sliced
A small handful of alfalfa sprouts
Method
  1. Combine the mashed potatoes with the lemon juice and spring onions in a large mixing bowl. Season well with salt and pepper. Shape the mixture into 16 small cakes.
  2. Heat the oil in a frying pan over a medium-high heat and cook the cakes for three minutes per side until brown and crispy.
  3. Mix the cream cheese with the horseradish and place a small spoonful onto each cake. Top with a small slice of Hederman’s Smoked Salmon and a few sprouts.
