Pear and fig salad

  • 300g mixed salad leaves
  • 2 ripe pears, cored and thinly sliced
  • 8 fresh figs, halved
  • 80g blue cheese, crumbled
  • 60g walnuts, roughly chopped

For the vinaigrette:

  • 200ml extra-virgin olive oil
  • 120ml lemon juice
  • 1 tsp salt
  • 2 tbsp lemon curd
  • 1 tbsp honey
  • 1 tsp Dijon mustard


  1. Whisk together all of the ingredients for the vinaigrette.
  2. Place a pile of salad on each plate and arrange the pears and figs on top. Scatter over the cheese and nuts and drizzle with just enough of the vinaigrette to lightly coat. Serve immediately.
