Ingredients
4 x thick sirloin steaks, fat trimmed
Salt and black pepper
1 tbsp olive oil
4 eggs
4 thick slices of bread, toasted
4 tbsp horseradish sauce
A large handful of rocket
Method
  1. Heat a frying pan over a high heat. Dry the steaks with kitchen paper and season generously with salt and pepper. Rub the oil over the steaks to coat.
  2. When the pan is hot, add the steaks and cook for 1-2 minutes per side until charred.
  3. Preheat the grill, then transfer the steaks to the oven and grill for two minutes per side.
  4. Crack the eggs and discard the whites. Remove the baking tray from the oven and gently place an egg yolk over each steak. Return to the grill for 1-2 minutes, until the yolks are set but still runny in the centres. Remove from the oven and allow to rest.
  5. Spread the toasted bread slices with horseradish sauce and pile with rocket leaves. Top with a steak and serve warm.
