Ingredients
3 tbsp Dijon mustard
2 tbsp smoked paprika
Salt and black pepper
8 good-quality, meaty, Irish pork spare ribs (or 4-5 halved strips of belly pork)
2 tbsp vegetable oil
2 tbsp honey
3 tbsp brown sugar
15 g butter
1 x beef stock cube, crumbled
2 tsp chilli flakes (or more if you reckon the lads can hack it!)
2 tbsp apple juice (or sieved juice from 1 apple)
6 tbsp hazelnuts, roasted and very finely chopped (or ground)
Coleslaw
4 x corn on the cob (cooked and cut in half
15 g butter
Salt
Cayenne pepper, for dusting
Method
  1. Preheat the oven to 130˚C/110˚C fan/gas mark ½. Rub the mustard, paprika, plenty of salt and some pepper all over the ribs. Place them on a roasting tray covered with foil, drizzle with the oil and cover loosely with another sheet of foil. Cook in the oven for three hours.
  2. Check on the ribs every hour and drain off any fat that might have gathered. When done, the meat should be very soft and juicy.
  3. Increase the temperature to 140°C/120˚C fan/gas mark 1. Combine the honey, brown sugar and butter in a saucepan over a low heat. Add the crumbled beef stock cube, chilli flakes and the apple juice. Cook, stirring occasionally, until the sugar has dissolved and the sauce is sweet, sticky and shiny.
  4. Place the ribs on a new sheet of foil and brush liberally with the sauce. Fold over the foil into a package and return to the oven for 45 minutes. The honey and sugar will darken the meat and give it a beautiful, rich colour.
  5. Leave to cool for 10-15 minutes before lashing onto the table. I love them dunked in roasted, ground hazelnuts, but they can be served on the side.
  6. Serve the meat with coleslaw and hot corn on the cob rubbed with butter, salt and a light dusting of cayenne pepper. Stand back and watch them vanish like the ball at Messi’s feet!
