Cooking Spray
600 g pork fillet, cut into bite-size pieces
1 onion, chopped
2 tsp chilli powder
1 tsp ground cumin
1 tsp ground cinnamon
2 x 400g tin chopped tomatoes
80 g plain chocolate, chopped

Method
  1. Coat a large frying pan with cooking spray and heat over a medium-high heat. Add the pork and cook for five minutes, stirring occasionally, until cooked through. Remove from the pan and set aside.
  2. Add the onion and cook for three minutes until soft. Add the chilli powder, cumin and cinnamon. Cook for one minute until fragrant, stirring frequently.
  3. Add the tomatoes and chocolate and bring to a boil. Reduce the heat to medium-low, cover and cook for eight minutes. Return the meat to the mixture and serve warm over cooked rice.
