4 chicken fillets
1 tsp olive oil
1 avocado, chopped
2 tbsp fresh coriander leaves, chopped
1 jalapeño pepper, deseeded and finely chopped
2 limes, 1 juiced and 1 quartered
0 Salt and black pepper
1 Rub the seasoning over both sides of the chicken fillets. Heat the oil in a frying pan over a high heat. Add the chicken and cook for one minute per side, until just seared.
2 Reduce the heat and cook for 3-5 minutes per side until cooked through.
3 Combine the avocado, coriander, jalapeño pepper, lime juice and a pinch of salt and pepper in a bowl.
4 Squeeze one lime wedge over each chicken fillet and serve warm with the avocado salad.
