250 g penne
1 tsp vegetable oil
900 g beef mince
1 onion, chopped
220 g Cheddar, grated
800 g condensed Cream of Tomato soup
1 green pepper, deseeded and chopped
1 red pepper, deseeded and chopped
60 g ketchup
1 tsp chilli powder
250 ml water
150 g breadcrumbs
45 g butter, melted
Method

1         Preheat the oven to 180˚C/160˚C fan/gas mark 4. Bring a saucepan of water to the boil and cook the penne according to the package instructions. Drain and set aside.

2         Heat the oil in a frying pan over a medium-high heat and add the beef mince and onion. Cook, breaking it up with a wooden spoon, until the beef is cooked through and the onion is soft. Drain off the excess fat.

3         Mix together all of the other ingredients in a large bowl and stir in the beef mixture and the penne. Transfer to a baking dish.

4         Stir together the breadcrumbs and butter, and sprinkle over the top.

5         Bake for 20-30 minutes until the mixture is bubbling and the topping is golden.
