Ingredients
360 ml fresh milk
3 eggs
120 ml flour
1 tsp salt
30 g unsalted butter, melted
1 tsp vegetable oil
1 tbsp olive oil
10 fresh sage leaves
6 thick slices of ham
2 tbsp maple syrup
3 green apples, thinly sliced
80 g Cheddar, grated
Method
  1. Whisk together the milk and eggs in a large bowl. Sift in the flour and salt and whisk to combine. Whisk in the butter.
  2. Heat the oil in a frying pan over a medium-high heat. Pour enough batter in to cover the bottom of the pan, tilting to evenly coat.
  3. Cook the crêpes for 1-2 minutes until the edges start to brown and the top is dry. Gently flip with a spatula and cook for another 25-30 seconds. Keep cooked crêpes warm while you repeat with the rest of the batter.
  4. Heat the olive oil and sage leaves in the frying pan over a medium heat. Cook for three minutes until the leaves are crispy. Remove from the pan and drain on a plate lined with kitchen paper. 
  5. Brush the ham slices with maple syrup and fry for 2-3 minutes until crisp.
  6. Lay a few apple slices in the centre of each crêpes and top with the Cheddar. Lay over a slice of ham and crumble the sage leaves over the top. Fold over the edges of each crêpes and serve warm.
