Cooked ham frozen from last Saturday, cut into small chunks
4 spring onions, white and green parts separated and chopped
2 garlic cloves, crushed
2 tsp fresh ginger, peeled and finely grated
Salt and black pepper
200 g cooked white rice
2 tbsp rice wine vinegar
2 tbsp soy sauce
4 large eggs
1 In a large nonstick pan, heat half of the oil over a medium-high heat. Add the ham, the whites of the spring onions, garlic and ginger. Season and cook for 2-4 minutes, stirring often, until just beginning to brown.
2 Add the rice, the greens of the spring onions, rice wine vinegar and soy sauce. Cook, stirring, for 2-4 minutes until heated through. Divide the fried rice between four serving bowls.
3 Wipe out the pan with kitchen paper. Heat the remaining oil over a medium heat. Gently crack the eggs into the pan, season with salt, and cook for 2-4 minutes until the whites are set. Top each bowl of rice with a fried egg.
