Ingredients
100 ml olive oil
4 onions, peeled and finely chopped
Salt and black pepper
450 g beef mince
450 g pork mince
10 garlic cloves, peeled and finely sliced with a razor
100 ml white wine
250 ml beef stock
150 g tomato purée
2 x 400g tin chopped tomatoes
400 g hangar steaks (you can substitute flank steak)
Hot, crusty Italian bread
Chianti wine
Method
  1. Heat 70ml of oil in a large frying pan over a medium-low heat and add the onions. Season with salt and pepper and cover with a lid and cook, stirring occasionally, for 15-20 minutes until completely soft and translucent.
  2. Heat one teaspoon of oil in another frying pan over a medium-high heat and cook the mince in batches. Drain each batch on a plate lined with kitchen paper and return to the pan.
  3. Cook the garlic with the meat for 1-2 minutes until fragrant and add the wine. Bring to a boil and allow to reduce to a paste.
  4. Pour in the stock and allow to reduce by half.  Cook this for 1-2 minutes, until the garlic starts to break down. Add the white wine, boil and reduce to a paste, then add the stock.
  5. Stir the tomato purée into the onions and cook for 1-2 minutes. Add this to the meat mixture, stir in the chopped tomatoes, cover with a lid and allow to cook over a low heat for 1-2 hours.
  6. Just before serving, heat a grill pan to a medium-high heat and season the steaks with salt and pepper. Grill for 3-4 minutes per side for medium rare. Serve with the stew and warm, crusty bread and Chianti wine.
