Ingredients
500 g carrots, chopped into large chunks
2 large leeks, chopped into large chunks
3 parsnips, peeled and chopped into large chunks
Zest and juice of 1 lemon
2 tbsp honey
500 g chicken breasts
50 g rocket, chopped
Method
  1. Put the carrots in a large saucepan of water and bring to the boil. After 10 minutes, add the leeks and parsnips and boil for another 15 minutes until tender.
  2. Meanwhile, preheat the grill to high. Mix the honey, lemon zest and juice and brush half of the mixture onto the chicken. Put the chicken, glazed side up, on a foil-lined baking tray and grill for 5-6 minutes.
  3. Turn over and brush with the remaining honey mixture. Grill for another 5-6 minutes or until the chicken is cooked through, turning gently to coat in the glaze.
  4. Drain and roughly mash the vegetables. Season, then stir in the rocket until it has wilted. Serve the chicken on a bed of mash with extra glaze drizzled over.
