Ingredients
2 tsp olive oil
8 garlic cloves, crushed
1 tbsp lemon juice
170 g mayonnaise
2 tbsp natural plain yogurt
1 tbsp Dijon mustard
1 tsp dried rosemary
60 g Parmesan, grated
4 x 170g salmon fillets
450 g asparagus spears, trimmed and roasted
Method
  1. Preheat the oven to 200˚C/180˚C fan/gas mark 6. Heat oil in a frying pan over a low heat and cook the garlic for 2-3 minutes until soft but not coloured. Transfer to a blender with the remaining ingredients, except for the salmon, and purée until smooth.
  2. Place the salmon on a baking tray lined with foil and spread over the garlic mayonnaise mixture. Bake for 12-15 minutes until the salmon flakes easily with a fork. Serve warm with the asparagus spears.
