Fusilli with Garlicky Kale

Ingredients
400 g fusilli
1 tbsp olive oil
3 leeks, finely sliced
2 garlic cloves, crushed
250 g kale, shredded
200 ml crème fraîche
50 g blue cheese, crumbled
Method
  1. Bring a large saucepan of water to the boil and cook the fusilli according to the package instructions.
  2. Heat the oil in a frying pan over a low heat. Add the leeks and garlic and cook for 15 minutes until soft.
  3. Stir in the kale and cook for 3-5 minutes until wilted. Add the crème fraîche, stir and remove from the heat. Stir in most of the blue cheese until slightly melted.
  4. Add the fusilli to the pan and toss with the sauce. Serve in bowls with the remaining blue cheese on top.
