Ingredients
8 eggs
50 g sour cream
Salt and black pepper
2 tsp olive oil, plus extra for greasing
4 bacon rashers, cut into strips
12 mushrooms, sliced
4 sausages, cut into chunks
4 leftover roast potatoes, cut into bite-size chunks
A handful of cherry tomatoes, halved
1 green chilli, deseeded and chopped
Method
  1. Heat the oven to 180°C/160°C fan/gas 4. Whisk the eggs with the sour cream and season with salt and pepper.
  2. Heat the oil in a nonstick frying pan and cook the bacon, mushrooms and sausages for 6-8 minutes until caramelised and cooked through. Add the potato chunks, tomato and chilli and cook for another two minutes to heat through.
  3. Add the mixture to a small, lightly-greased baking tray and pour over the egg mixture. Bake for 5-7 minutes until the egg has risen slightly and set.
