To serve:

  1. Whisk the eggs, milk, cinnamon, vanilla and sugar in a shallow bowl.
  2. Heat some of the butter in a frying pan over a medium heat. Working one at a time, dip the bread into the eggy mixture until both sides are covered.
  3. Cook the bread for 2-3 minutes per side until golden brown.
