Ingredients
350 g mixed berries, plus extra to serve
3 tbsp icing sugar, plus extra to serve
3 tbsp brandy
12 soft amaretti biscuits
6 tbsp blackberry jam
250 g Mascarpone
50 g caster sugar
2 egg yolks
2 tbsp cornflour
2 tbsp caster sugar
300 ml fresh milk
3 tbsp Advocaat liqueur
1 tsp vanilla extract
Method
  1. Combine the berries, icing sugar and brandy in a bowl. Leave to sit at room temperature for 20 minutes.
  2. Divide the amaretti biscuits between six glasses. Top each with one tablespoon of jam, then spoon in half of the berry mixture.
  3. Beat the Mascarpone and sugar together until combined, then spoon it over the fruit. Chill for 30 minutes. 
  4. Beat the egg yolks, cornflour and sugar for the custard in a bowl. Heat the milk in a saucepan over a low heat until it almost simmers. Gradually whisk it into the egg mixture.
  5. Return the mixture to the pan and stir over a low heat for 5-7 minutes until the it thickens but does not boil. Pour into a bowl and stir in the Advocaat and vanilla. Cover tightly with clingfilm and leave to cool.
  6. Spoon the custard over the Mascarpone and top with the remaining berries. Dust with icing sugar to serve.
