Ingredients
3 tbsp red wine vinegar
2 tbsp soy sauce
1 tbsp tomato sauce
2 tsp sugar
1 tsp hot chilli sauce
1 tsp salt
1 tsp pepper
240 ml water
1 tbsp olive oil
900 g pork loin
1 onion, sliced
3 garlic cloves, finely chopped
Method

1            In a bowl, mix together the vinegar, soy sauce, tomato sauce, sugar, chilli sauce, salt and pepper. Add the water and mix again.

2            Heat the oil in a large pan over a medium-high heat. Cook the pork until brown on all sides.

3            Add the onion slices, garlic and sauce.

4            Cover and cook over a medium-low heat for 3-4 hours, until the meat is very tender and almost falling apart.

5            Allow the meat to rest for 10 minutes, then slice and serve with the onions, mashed potatoes and some sweetcorn.
