Ingredients
600 g new potatoes
600 g salmon fillets
Salt and black pepper
1 tbsp olive oil
1 shallot, chopped
120 ml white wine
1 tbsp Dijon mustard
2 tbsp fresh dill, chopped
30 g cold butter, cubed
Method
  1. Add the potatoes to a large saucepan of water and bring to the boil. Cook for 15 minutes until tender. Drain and set aside.
  2. Heat the grill to high and place the salmon on a baking tray lined with foil. Season with salt and pepper and grill for 7-10 minutes until it is easily flaked with a fork.
  3. Heat the oil in a frying pan over a medium heat and cook the shallot for one minute. Add the wine and cook for three minutes until it reduces by half.
  4. Reduce the heat to low and whisk in the mustard, dill and a pinch of salt and pepper. Remove from the heat and whisk in the butter.
  5. Cut the potatoes into thick slices and alongside the salmon with the sauce poured over.
