2 tsp olive oil
400 g spaghetti
1 red chilli, deseeded and finely chopped
150 ml single cream
100 g rocket, chopped
0 Salt and black pepper
1 Cut the end of each sausage and squeeze the sausage meat out of the skins. Break the sausage meat into grape-size chunks.
2 Heat the oil in a large non-stick frying pan over a medium heat and cook the sausage meat chunks for about eight minutes until golden.
3 Meanwhile, place a large saucepan of water over a high heat and bring to the boil. Add the spaghetti and cook as per the packet instructions. Drain and set aside.
4 Add the chilli to the sausages and cook for 30 seconds or until fragrant.
5 Pour in the cream and rocket, season with salt and pepper and heat until the rocket wilts.
6 Add the pasta to the sauce and mix together. Serve immediately.
