Ingredients:
- 280g plain Greek yogurt
- 2 tbsp coriander, finely chopped
- 1 tbsp mint, finely chopped
- Zest of 1 lemon
- 2 tsp lemon juice
- ½ tsp ground cumin
- 1 cucumber, peeled, halved lengthwise, deseeded and finely chopped
- Salt and black pepper
Method:
- In a medium bowl, combine all of the ingredients.
- Stir to blend and season to taste with salt and black pepper.
