Cool cucumber raita

Serves 4

Ingredients:

  • 280g plain Greek yogurt
  • 2 tbsp coriander, finely chopped
  • 1 tbsp mint, finely chopped
  • Zest of 1 lemon
  • 2 tsp lemon juice
  • ½ tsp ground cumin
  • 1 cucumber, peeled, halved lengthwise, deseeded and finely chopped
  • Salt and black pepper

Method:

  1. In a medium bowl, combine all of the ingredients.
  2. Stir to blend and season to taste with salt and black pepper.
