4 portions of the coconut, spinach and chickpeas, from Monday
2 garlic naan breads, warmed and cut in half
1 Cook the rice according to packet instructions. Meanwhile, heat the coconut, spinach and chickpeas in a pan over a medium heat.
2 Drain the rice and divide between serving plates, then spoon over the coconut chickpeas. Serve each portion with half a garlic naan.
