Ingredients
4 salmon fillets
240 ml cider
60 ml soy sauce
60 g butter
2 garlic cloves, crushed
1 bay leaf
1 tsp rosemary
1 tsp thyme
1 tsp pepper
1 red onion, thinly sliced
Green salad
Mashed potatoes
Method
  1. Place the salmon fillets in the bottom of a baking dish. Mix the remaining ingredients until well combined and pour over the salmon. Leave to marinate for at least 15 minutes.
  2. Preheat the oven to 190°C/170°C fan/gas mark 5 and transfer the salmon to a baking tray lined with tin foil. Bake for 20-25 minutes until thoroughly cooked. Serve with a green salad and mashed potatoes.
