25 g butter
1 large chorizo sausage, cut into thin long slices
4 chicken breasts, trimmed of any fat
1 Heat the oven to 200˚C/gas mark 6. Put the potatoes in a large saucepan of water and place on a high heat. Bring to the boil, then reduce the heat and simmer for 10-15 minutes until tender.
2 Drain and add the butter. Mash together and cover with a lid until needed.
3 Meanwhile, lay half the chorizo slices over each chicken breast, overlapping so the chicken is covered, then tuck the edges underneath to secure.
4 Lift onto a baking tray and place in the oven to roast for 20 minutes, turning the chicken halfway until cooked through. Serve each piece of chicken with some mashed potato.
