1 red chilli, deseeded and finely chopped
2 tbsp dried coriander
Salt and black pepper
1 tbsp olive oil
A small handful of lettuce leaves (any type)
4 burger buns, toasted
300 g cherry tomatoes
2 tbsp sweet chilli sauce
1 small red onion, finely chopped
2 tsp dried coriander
1 In a large bowl, add the minced beef, chilli and coriander. Season well with salt and pepper. Using your hands (making sure they are clean), mix everything together and form four burger patties, about 2.5cm thick.
2 To make the salsa, add all of the ingredients into a small bowl and mix together. Blitz together with a hand blender for a few seconds.
3 Heat one tablespoon of oil in a non-stick frying pan on a medium-high heat. Add the burgers and cook on each side for 4-5 minutes or until cooked to your liking.
4 To serve, place 1-2 lettuce leaves onto the bottom half of a burger bun, add a burger and top with some salsa and the top of the bun.
