Ingredients
300 g rice noodles
1 kg roast chicken, skin removed
115 g peanut butter
2 tbsp soy sauce
1 carrot, shaved
1 cucumber, shaved
Method
  1. Place the noodles in a large heatproof bowl and cover with hot water from the kettle. Cover and leave to soak for 20 minutes until soft.
  2. Shred the meat from the chicken into thin pieces.
  3. Whisk together the peanut butter, soy sauce and 90ml of water until smooth.
  4. Drain the noodles and toss with the chicken, carrot, cucumber and sauce.
