2 broccoli heads, cut into florets
Salt and black pepper
2 tbsp olive oil
1 onion, finely sliced
2 red chillies, deseeded and sliced
2 garlic cloves, chopped
10 black olives
4 tbsp soy sauce
1 Heat a griddle pan over a medium to high heat and add a teaspoon of oil.
2 Place the chicken breasts in the pan and cook on each side for 5-6 minutes until cooked through. Set aside on a plate covered with kitchen towel.
3 Meanwhile, place the broccoli in a large saucepan of water on a high heat and bring to the boil. Once it begins to boil, drain and rinse with cold water to stop the cooking process. Place in a bowl, season with salt and pepper and set aside.
4 Heat the remaining oil in a pan on a low-medium heat and add the onion. Cook for two minutes.
5 Add the chillies and garlic, then cook for a further three minutes until softened.
6 Pour in the soy sauce and cook for a minute until warmed through.
7 Pour the soy sauce mixture into the bowl on top of the broccoli.
8 Cut the chicken breasts into slices and add to the bowl with the broccoli mixture, along with the olives. Toss everything together and serve immediately.
