Ingredients
375 g plain flour
1 tsp salt
1 tbsp caster sugar
7 g dried active baking yeast
2 tbsp olive oil
230 ml warm water
1 tbsp olive oil
1 onion, thinly sliced
1 tsp sugar
0 Salt and black pepper
120 g tomato passata
220 g Mozzarella, grated
120 g chorizo, chopped
Method

1            Preheat the oven to 200˚C/180˚C fan/gas mark 6. Combine the flour, salt, caster sugar and yeast in a bowl. Mix in the oil and warm water until it comes together as a dough. Spread out onto a large pan and crimp the edges to form a crust. Leave to rise while you prepare the other ingredients.

2            Heat the oil in a frying pan over a medium heat. Add the onion and cook for five minutes, stirring frequently. Add the sugar, salt and pepper and cook for another 10 minutes until browned.

3            Spread the passata over the pizza base and top with the Mozzarella, chorizo and cooked onions.

4            Bake for 10-15 minutes until the crust is crisp and the cheese has melted.
