4 large onions, finely sliced
a pinch of sugar
a pinch of salt
500 g slow-cooked beef
1 sheet of ready-rolled puff pastry
1 egg, beaten
1 Preheat the oven to 180˚C/160˚C fan/gas mark 4. Gently fry the onions in the olive oil with the sugar and salt on a low heat for 20 minutes or until golden and soft.
2 Add the slow-cooked beef to the onions and fold in until fully incorporated.
3 Line four individual greased casserole dishes with pastry and fill with the beef and onion mixture. Top with puff pastry and brush with the beaten egg to glaze.
4 Bake for 25 minutes or until the pastry is crisp and golden brown.
