1 tbsp Dijon mustard
2 tsp fresh rosemary, chopped
1 tsp dried thyme
2 garlic cloves, crushed
2 tsp salt
1 pork tenderloin
1.5 tbsp coarsely cracked black pepper

1 In a small bowl, mix the olive oil, mustard, rosemary, thyme, garlic, and salt. Brush the mixture over the pork. Sprinkle all sides of the tenderloins with the black pepper so that it sticks to the herb mixture.
2 Preheat a barbecue or grill. Cook the pork for 15-20 minutes, turning to ensure that it is evenly cooked on all sides.
3 Transfer to a cutting board and cover with foil. Allow the meat to rest for five minutes before serving. Slice the pork and serve with rice, salads or roasted baby new potatoes.
