15 g butter
4 skinless plaice fillets
0 Salt and black pepper
350 g carbonara sauce
1 handful of flaked almonds
3 tbsp Parmesan, grated
1 Preheat the oven to 180˚C/160˚C fan/gas mark 4. Heat a frying pan over a medium heat and add the spinach and one tablespoon of water. Cook, stirring occasionally, for one minute or until the spinach has wilted.
2 Butter a baking dish and arrange the spinach across the bottom. Season the plaice with salt and pepper and roll up starting from one tip of the fillet.
3 Lay the rolls on top of the spinach and spoon the sauce over the fish until it is well covered. Scatter over the almonds and Parmesan and bake for 20 minutes, until the sauce is bubbling and golden. Serve with potatoes.
