Ingredients
1 tbs9 olive oil
2 onions, thinly sliced
Salt and black pepper
600 g chicken mince
1 tsp Dijon mustard
1 tbsp fresh rosemary, chopped
50 g breadcrumbs
150 g Brie, thinly sliced
4 crusty round rolls, halved
2 apples, peeled, cored and thinly sliced
Method
  1. Heat the oil in a frying pan over a medium heat and add the onions. Season and cook, stirring often, for 15-20 minutes until very soft and caramelised.
  2. Combine the chicken mince in a large bowl with the mustard, rosemary and breadcrumbs. Shape into four patties.
  3. Coat a grillpan with cooking spray and heat over a medium-high heat. Cook the burgers for five minutes, then flip and cook for another two minutes. Top each with a few slices of Brie and cook for another 2-3 minutes until melted.
  4. Serve on rolls with a few apple slices and the caramelised onions.
