    Fancy something sweet for an indulgent late brekkie? Try these easy blueberry buttermilk pancakes!
    Blueberry buttermilk pancakes
    Makes 12

    80g butter, plus extra
    375g flour
    3 tbsp sugar
    3 tsp baking powder
    1½ tsp baking soda
    ¾ tsp salt
    700ml buttermilk
    120ml milk
    3 eggs
    1 tsp vanilla extract
    210g blueberries

     

    Melt the butter in a small saucepan and set aside to cool.

     

    2 In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together the buttermilk, milk, eggs, vanilla extract and the cooled, melted butter.

     

    3 Pour the buttermilk mixture into the
    dry ingredients and use a wooden spoon to mix. Stir until just blended together, then
    add the blueberries, taking care not to stir
    too much.

     

    4 Melt some butter in a small frying pan over a medium high heat. Ladle some pancake mixture into the pan and cook for 2-3 minutes on each side until brown. Repeat with the remaining mixture.
